This sausage and potato soup has quickly become a family favorite in our house, and I can’t wait to share the recipe with you. This soup isn’t just delicious; it’s also super simple to make, which is perfect for busy moms (I see you!). The combination of savory sausage, tender potatoes, and a creamy soup broth makes it a comforting meal that the whole family will love—even the picky eaters! Plus, it’s one of those dishes that tastes even better the next day, making it perfect for meal prep.


Ingredients You’ll Need:

  • 1 pound of ground sausage (spicy or mild—your choice!)

  • 5-6 medium potatoes, diced

  • 1 medium onion, finely chopped

  • 1 cup carrots, diced

  • 2 celery stalks, diced

  • 5 cups chicken broth

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • 1 teaspoon dried thyme

  • 1 teaspoon dried basil

  • 1 teaspoon dried parsley

  • 1/2 teaspoon ground mustard

  • Salt and pepper to taste

  • 1 teaspoon hot sauce

  • 1 teaspoon soy sauce

  • 3 tablespoons flour

  • Shredded cheese and crispy bacon bits for garnish (optional)


How to Make Sausage & Potato Soup

  1. Brown the Sausage: In a large pot or Dutch oven (you can find my favorite one linked in my Amazon Live!), cook the sausage over medium heat until it’s browned and cooked through. Remove the sausage from the pot and set it aside.

  2. Sauté the Veggies: In the same pot, add the chopped onion, celery, carrots and garlic. Cook until fragrant and the onions are translucent—about 3-4 minutes.

  3. Add Flour: Sprinkle the flour on top of softened veggies. Cook down for 2 minutes to remove the raw flour taste.

  4. Add Broth & Potatoes: Slowly add in the broth will stirring. Toss in the diced potatoes, thyme, basil, parsley, mustard, soy sauce, hot sauce, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.

  5. Make It Creamy: Once the potatoes are soft, add the cooked sausage back into the pot along with the heavy cream. Stir everything together and let it simmer for another 5-10 minutes to let the flavors meld.

  6. Serve & Enjoy: Ladle the soup into bowls, top with shredded cheese and crispy bacon bits, and enjoy every cozy bite!

Tips & Tricks for the Perfect Soup

  • Customize It: Swap out the sausage for ground turkey or chicken if you prefer a lighter option.

  • Make It Spicy: Add a pinch of red pepper flakes if you like a little heat!

  • Thicken It Up: If you prefer a thicker soup, mash a few of the potatoes with a fork right in the pot.
